I have been away for a long time. And it’s really not good enough to say that I was busy. Everyone’s busy. But I could not make time for something that I love the most. This space is my biggest escapade. It’s my terrain that I so closely safeguard. This is my legacy, my story in my own words that I would leave behind for my precious Ms. G, yet I have been away and I feel I owe you, my readers an explanation.

Avocado Brownies Recipe

I am on mission fitness now. The truth is I spend probably 14 hours a day, sitting in front of my computer. I am a workaholic and a social media addict. And I was really not happy with the situation. And this year, my resolution was to change things and focus on health. But for the whole month of January, I barely did anything about it. And so come February, I was restless and felt that I needed to get cracking ASAP.

Fortunately, I could find a class who held a 6 weeks weight loss challenge close to home. I signed up for an orientation and to my surprise, showed up for it too. Whatever I could understand from the presentation was that the program did not resort to anything unhealthy to achieve the desired weight loss. The challenge is to lose 20 pounds in 6 weeks and that is definitely a tall order. But the good thing is the challenge is all about getting you to be disciplined and focused, as much as it is to get you to shed those pounds. So yes, I mustered up the courage and dived in headfirst.

So far it’s been two weeks. It’s requiring me to reshuffle my priorities quite a bit throughout the day and be the multi –tasking queen even more but I am enjoying it.

I am falling back on the blog for sure. But I needed to start somewhere. I will definitely keep you updated on my progress with the challenge. Honestly, I am cooking a lot but not exactly gotten around to innovate anything with the ingredients that I am allowed from the three macronutrient groups. So until I do that, you will see a lot of recipes that I photographed before but they never made it to the blog.

The Avocado Brownies recipe I am posting today is something I wanted to try for the longest time. It is the gluten-free brownies with Avocadoes. I am so glad that I tried them. Sam and I are pretty much hooked but Ms. G says she would be rather happy with eating avocados in Guacamole. She says, “Mom, brownies are better unhealthy”. Well, looks like I have work cut out for me with this lil dame.

Description

Try out this Sweetness filled Avocado Brownies Recipe at home. A deliciously dense and rich brownie made totally gluten-free.


Ingredients

  • Avocado – 1 large, pitted, skinned and mashed
  • Dark Chocolate Chips – ½ cup
  • Dark Brown Sugar – 1/2 cup
  • Instant Coffee – 2 tsp
  • Vanilla Extract – 2 tsp
  • Eggs – 2
  • Cocoa Powder – ½ cup
  • Almond Meal – ½ cup
  • Oat Bran – ¼ cup
  • Honey – 1/2 cup
  • Salt – ¼ tsp
  • For Frosting
  • Semi-sweet chocolate chips – 1/3 cup
  • Butter – 3 tbsp, melted
  • Milk – 4 tbsp, divided
  • Cream cheese – 3 tbsp

Instructions

  1. Pre-heat the oven to 350 degrees F.
  2. Cream together the eggs, brown sugar, vanilla, honey and coffee.
  3. Add in the avocado and incorporate it in.
  4. In a bowl, pour in the oat bran, cocoa powder, almond meal and dark chocolate chips.
  5. Pour in the wet ingredients on the dry ingredients. Mix well but don’t over mix the batter.
  6. Line a 8X8 square pan with parchment paper.
  7. Pour in the batter and bake for 30-35 minutes. Do not over bake and once out of the oven, allow to cool down completely.
  8. For the Frosting
  9. Melt the chocolate chips over a double boiler or in the microwave. If you’re doing it in the microwave, bake for a minute at a time, take out and stir and put it back in the microwave for another minute and so on until the chocolate chips melt.
  10. Add in the melted butter and 2 tbsp of milk. Stir to prepare a smooth frosting.
  11. Pour the frosting over the cooled brownies and spread evenly.
  12. In a bowl, mix together cream cheese and 2 tbsp of milk and mix well. Take the cream cheese in a piping bag and cut out a small tip. Now make zig-zag pattern with the cream cheese over the frosted brownies.
  13. Cut the brownies in squares and serve.
