Growing up we never ate cereals for breakfast, at least the packaged ones. The Kelloggs and Cheerios were something I was introduced to probably in my undergraduate years, thanks to the marketing blitz of FMCG giants targeting developing markets like India then. Even today, a good breakfast back home does not definitely feature a cereal bowl.

Now breakfast for me has always been way more than just the food. It’s the setting that goes with a particular type of breakfast. For example, a traditional breakfast back home with family has a completely different setting associated with it as compared to the one here. Not that I say one is better or preferred over the other. It’s just that they are different.

Banana Bread Baked Oatmeal Recipe

A traditional breakfast back home has nothing to do with solitude. It has the whole family gathered around the table with our cook dishing out non-stop hot puffed pooris (deep fried puffed bread) or parathas (skillet grilled flat-bread) alongside some delicious curries and homemade sweets. These meals are nutrition nightmares. But these are meals, which are remembered and reminisced the most today by the husband and me. These are memories of home, of happy faces, of being loved and cared for. Living thousands of miles away from home, these food memories are our keepsake today.

Then again I have my cereal bowls. These are my daughter Gungun’s favorite. Warm and fresh-off-the-stove steel-cut oats, with chia seeds, ground almond-flax seeds, banana, strawberries, blueberries, cinnamon and a generous drizzle of honey. These are meals over which I bond with the remaining two members of my family first thing in the morning. We absolutely love and devour breakfasts of omelets, toast and sausages too. Besides there are always the celebratory pancake days, especially on weekends. Probably, somewhere along the way we are making memories for Gungun now.

And then there are days when I work from home and eat breakfast all by myself. A toast with the mandatory fixin’s like peanut butter, jam or Nutella accompanied with a well-made cup of coffee. Not elaborate by any means, but periodically I look forward to these too. Just being with myself before all the hullabaloo of the day starts is quite precious to me. A few minutes of just focusing on myself is extremely rejuvenating and energizing. But this happens on rare days.

However, all said, I decided to kick up our daily oatmeal a notch the other day. I had some over-ripe bananas. I was about to do the expected, that is, make banana bread. And then something struck me. I wanted to do baked oatmeal and incorporate the flavors of banana bread in it. I also made sure to put fistful of pretty much all the good stuff lying around in the kitchen like raisins, strawberries, blueberries, almonds, walnuts and pepitas. And OMG, it turned out to be the best breakfast ever. With the brown sugar, cinnamon and pumpkin spice in it, the house smelled delicious and inviting. Warm and replete with nutritious ingredients it turned out to be one cozy and comforting breakfast, especially for such chilly autumn mornings. It feels like having banana bread but without any guilt whatsoever.

Baked Banana Bread Oatmeal Recipe

Description

Ingredients

  • Cooked Steel Cut Oats – 2 cups (you can use Old Fashioned oats too)
  • Brown Sugar – ¼ cup
  • Chia Seeds – 2 tbsp
  • Ground Flax Seeds – 2 tbsp
  • Almond Meal – 2 tbsp
  • Egg – 1, large
  • Honey – 3 tbsp
  • Baking Powder – 1 tsp
  • Baking soda – ½ tsp
  • Banana – 3, large mashed ( 1 1/2 cup)
  • Vanilla Extract – 1 tsp
  • Cinnamon – 1 1/2 tsp
  • Pumpkin Spice – 1 tsp
  • Vegetable Oil – 1/4 cup
  • Raisins – ¼ cup
  • Blueberries – ¼ cup
  • Chopped Strawberries – ¼ cup
  • Dried Cranberries – 1/4 cup
  • Slivered Almonds – ¼ cup
  • Pepitas – 2 tbsp
  • Walnuts – ¼ cup, chopped and toasted

Instructions

  1. Pre-heat oven to 350 degrees F.
  2. In a bowl, cream together vegetable oil, mashed banana, honey, egg and brown sugar. Add the vanilla extract and mix well.
  3. In another bowl, take the oats, baking powder, baking soda, cinnamon and pumpkin spice.
  4. Add the chia seeds, flax seeds and almond meal. Mix well.
  5. Pour in the wet ingredients in it and mix well.
  6. Add the raisins, blueberries, strawberries, almonds, pepitas and walnuts. Save a little of these to top the oatmeal later.
  7. Grease a pan and pour in the oatmeal. Now throw in the toppings that you saved earlier.
  8. Bake for an hour or until a skewer inserted inside comes out clean.
  9. Serve warm and you can choose to serve it with a drizzle of maple syrup or honey. But it’s totally optional.

Notes

  • You can freeze this and it warms beautifully. You can assemble and freeze and bake later.
  • If you are using old fashioned oats, you would need to add 1 ½ cup milk to the mixture.
