Let me tell you this, I am embarrassed and some more when it comes to attempting to offer an explanation for the delinquent behavior I have exhibited towards this space lately. The last 3-4 weeks were crazy busy for reasons more than one. The first n foremost was the fact that is the time of the year when we Bongs celebrate our biggest annual festival, Durga Puja or as we say Durga Pujo. I am part of an all Women group who organizes a very vibrant Durga Puja in the Bay Area replete with all the cultural elements, which soothes and satiates the NRI soul.

Cashew Apple Recipe

This year, I was made in charge of putting together a Bengali Bridal Fashion Show as part of the cultural extravaganza that we were putting up every evening in this four-day long event. Without going into the details, let me tell you this that this show was all about taking care of the details. The Bong bridal look is simple, sophisticated and demands a lot of TLC. And to get everything together some 9000 miles away from home was not exactly a cakewalk.

Having said that I do need to share with you guys that the fashion show was the first of its kind to be held here and was a huge success. It is the talk of the town now and I am beaming with the pride of accomplishing something, which I never tried before. I am actually very proud of the fact that I mustered up the courage to take on this responsibility and could deliver to everyone’s expectations and some more. The timorous apprehension of executing something so big right from scratch to finish kept me away from all my other regular commitments and chores for all these weeks.

Under normal circumstances, this is the time of the year when my kitchen would be bustling with the expected festive fervor and the entire homebound nostalgia would make its way into the meals being cooked. However, this year was very different and except for a couple of special sweets/desserts, I barely cooked.

This particular sweet recipe that I am blogging today is called Cashew Apple Recipe. This recipe surfaced on my Facebook feed some days back and as tired as I was, the recipe still looked very easy, doable and fun. Back home these apples would adorn the shelves of confectionery stores this time of the year especially for Diwali. I would admit this is not really a Bengali sweet. However, this particular sweet would always be my favorite growing up because of their uncanny similarity with real Shimla apples.

They are so cute and delicious and would catch the fancy of kids right away. Made from cashew and sugar, these are actually two-ingredient sweets if you don’t include the aromatics, in this case, the cardamom and the cloves and also the food coloring. And I fell in love with these right away. In fact, I will definitely include them in the Diwali hampers I would send out to friends and neighbors this year.

Description

Try this Delicious Cashew Apple Recipe at home. This gorgeous dessert is deliciously easy and perfect to be included in Diwali hampers.


Ingredients

  • Cashews – 2 cups
  • Sugar – 1 cup
  • Water – ½ cup
  • Cardamom Powder – 1 tsp
  • Cloves – 14
  • Food Color – Red, Green and Yellow
  • Edible Silver Foil – 2 leaves, optional

Instructions

  1. Grind the cashews into a fine powder.
  2. Take a non-stick pan, and throw in the sugar and the water.
  3. Wait for the sugar to melt and come to a boil and from this point on, keep stirring continuously. The sugar syrup has to come to a one-string consistency and this took about 3-4 mins for me from the stage when the syrup came to a rolling boil.
  4. Add a drop of the yellow food color and the cashew meal. Bring everything together into dough and remove from the heat. This will take about couple of mins. The dough should leave the sides of the pan and when touched should not stick to fingers.
  5. Add cardamom powder and mix it in the dough.
  6. Now make small balls out of the dough and shape into an apple with a slight indentation in the center.
  7. Add a clove to replicate the stalk of the apple.
  8. Once you’re done making all the apples, mix two drops of red food color with two drops of water.
  9. Lightly brush the red color onto the apples.
  10. Mix water and green food color the same way, and lightly brush the top of the apples with it.
  11. Embellish with edible silver foil.
