Two days to Christmas! And I have finally made them, the Coconut Jam Cookies Recipe. For me, this is the most awaited holiday of the year. I did my schooling in a Christian Missionary convent, so Christmas has been a very big event for me growing up. Cakes and Cookies galore, Christmas also meant picnics. In India, summer is not as enjoyable and not synonymous with family outings as it is here in the US. It is a sweltering nightmare and people choose to stay indoors.

Coconut Jam Cookies Recipe with a Jam Heart

Winters are pleasant and that’s when people enjoy getting together for picnics. When I was a little girl, a lot of times we would have picnics where a lot of cooking would be done on spot, kind of like barbecuing at the park. The only difference being that we are talking about slow cooked complex curries and traditional Indian fare here. The group (mostly dads) in charge of cooking would get started the moment they would reach the location and soon would be seen stirring boiling cauldrons of meat and sauce. That would be quite a scene.

The menu would be quintessentially some kind of a meat curry as the main entree accompanied with white rice, salad, papad (pappadums) and sweet chutney. That one curry was so scrumptious that the taste still lingers in my mouth. We would play badminton and huddle together and eat clementines as we waited for lunch to be served. Now we do summer picnics with wine and cheese, but the rustic charm of those picnics back in the day are hard to recreate.

I love this season here and enjoy it to the fullest but somewhere the heart still flutters from time to time and momentary lapses happen when the picnics come back to my mind.

Baking cakes and cookies for friends and family this time of the year is a tradition now and I did go all out this year too. I have already told you about the cookie hampers we sent to G’s teachers at school. These Coconut Jam cookies also were included in the hamper and in fact, I have baked quite a few batches of these this year. Again the Coconut Jam Cookies Recipe is adapted from the Donna Hay Christmas Cookies Special.

These cookies are a delicious spin on the more traditional sugar cookies and the coconut does add to the flavor profile tremendously. The jam is the surprise that the palate embraces completely in between bites of the real cookie. This recipe is a real showstopper when it comes Christmas cookies, just for the fact that it is easy, almost one-bowl, delicious, and the result is so visually stunning.

Description

Try out this Heart Shaped Coconut Jam Cookies Recipe at home. A delicious Christmas cookie which is easy, delicious and drop-dead gorgeous!


Ingredients

  • Butter – 1 Β½ sticks
  • Granulated Sugar – Β½ cup
  • Corn Flour – 2 tbsp
  • Egg – 1
  • Vanilla Extract – 1 tsp
  • All Purpose Flour – 1Β½ cup
  • Baking powder – Β½ tsp
  • Desiccated Coconut – Β½ cup
  • Powdered Sugar – For Dusting
  • Strawberry Jam – As needed

Instructions

  1. Sift the flour, corn flour and baking powder.
  2. Mix in the desiccated coconut powder.
  3. Cream the butter and sugar until the mixture looks a pale golden.
  4. Add egg and vanilla and combine well.
  5. Gently add the dry ingredients and fold them in. The dough will come together after couple of minutes.
  6. Cover with plastic wrap and freeze for 30 minutes.
  7. Divide the dough in two equal halves and roll out each portion between two sheets of parchment paper. Remove the top paper and cut out the cookies. I used a round cookie cutter.
  8. Now take one out of the two cookies, cut out a heart from the cookie that would be used to top the sandwich.
  9. Place the cookies on a baking sheet.
  10. Preheat the oven to 350 degrees F.
  11. Place the baking sheet in the freezer for 5 mins before putting in oven.
  12. Once in the oven bake for 8-10 mins until the edges are a light golden. Take out from oven and let the cookies cool on a cooling rack.
  13. Now take 1 tsp of jam and place on the cookie which is not cut in the middle.
  14. Take the cut-out rounds and dust them with powdered sugar. Gently place one on each jam slathered round to produce the sandwich cookie.

Notes

  • Freezing the cookies after they are cut and put in the oven helps them to retain their shape. So this step is a must.
