It’s Valentine’s Day today and to me, it has always been a good day looking back. I have a bundle of mushy memories from this day and from every single year. And this year too, things are fantastic. We have moved into our new house and settling in gradually. But in spite of everything, my heart is aching and it is aching for a little girl.

I have been following a particular little girl for the last 2 years. Her name is Anya and lived here in the Bay Area! She was diagnosed with DIPG about two years back and just two weeks back she finally gave up her fight. DIPG is a very aggressive brain tumor which affects children and most diagnosis happens between 5 and 7 years of age. In most cases, doctors give about 7-9 months post diagnosis. In this case, Anya along with her parents did beat the odds and Anya survived for a good 29 months. But finally, she lost the battle.

I believe in God and I especially believe that he resides within our fellow beings. He resides within you and me also and he gives us ample opportunity to give back, empower and brighten other’s lives. It is up to us to seize those divine moments. But it is not every day that we get to witness such divinity as I have in this case through Anya’s parents. Resilience, hope and never-say-die spirit define them. Their struggle to save Anya reached a dimension way beyond the ordinary. Anya brought a whole community of people together who became part of this journey. And her dad kept this community together, made them a part of their life. What an extraordinary gentleman he is, full of love and nothing else for his sweet angel. Anya would be put to rest tomorrow and a part of all of us who got to know her is mourning silently. What a fabulous life cut short way before time.

I have been doing everything but somewhere the heart is aching. I wished that this was a good Valentine’s Day for this family too and they would not have to remember it this way. The only thing I can do is pray for them and I would urge you to send some strength their way too. So this particular year it is all about a solemn realization of all that is good in life and being grateful and humble about it.  That’s the real essence of Valentine’s Day to me today. So everything said, I needed some distraction. I made these Mini Eggless Chocolate Bundt Cake Recipe with a Dark Chocolate Glaze and a dollop of whipped cream with a cherry on top. I made just two as I am really struggling with a bout of weight gain again. These are extremely easy and when plated well, makes a statement. I was really happy to serve this to Sam. Valentine’s Day or not, this is one guy I need to be by my side. He completes me like nobody does. We have been married for the last 13 years and all I know of life today is the one I have with him. It’s a good one when he is by my side. Happy Valentine’s Day to all of you. Count your blessings and hold them close to your heart.

Eggless Mini Chocolate Bundt Cake with Dark Chocolate Ganache Glaze

Ingredients

For Bundt Cakes

  • All Purpose Flour – ½ cup
  • Sugar – ½ cup
  • Brown Sugar – ¼ cup
  • Cocoa Powder – 1 tbsp
  • Vegetable Oil – 3 tbsp
  • Yogurt – 2 tbsp
  • Brewed Black Coffee – 3 tbsp
  • Salt – A pinch
  • Vanilla Extract – ½ tsp
  • Baking Powder – ½ tsp
  • Baking Soda – ½ tsp
  • For Dark Chocolate Ganache
  • Dark Chocolate Chips – 2 ounce
  • Heavy Cream – 1/4 cup

Whipped Cream

  • Heavy Cream – 1/2 cup
  • Powdered Sugar – 2 tso
  • Vanilla Extract – ¼ tsp

For Topping

  • Maraschino Cherries – 2 with stem

Instructions

  1. In a bowl, add vegetable oil, yogurt, vanilla extract and coffee. Mix well
  2. In another bowl, mix all the dry ingredients. Add the previously mixed wet ingredients. Mix well.
  3. In a greased mini bundt cake pan, add the batter.
  4. In a pre-heated 350 degrees oven, bake for 20-25 mins or until skewer inserted comes out clean.
  5. Let them cool on a rack.

For the Ganache

  1. In a ceramic bowl, add the cream and chocolate chips and microwave in intervals of 20 seconds. Take out and stir and keep doing it until you get a thick, glossy ganache.
  2. Spoon the ganache over the bundt cakes.

For the whipped cream

  1. Chill the metal bowl where you will whip your cream about an hour in advance.
  2. Add chilled cream, powdered sugar and vanilla extract and whip for about 5 mins or until stiff peaks form.
  3. Now assemble the cakes. Using 1M tip put a dollop of the whipped cream on the ganche and top it with a cherry.

  1. Oh my God Soma, I’m one of those thousands who have been following Anya as well:( My Valentines day was indeed on a very sad note with her funeral being yesterday. The dad’s cry is so painful and can’t even begin to imagine the mom’s. Such a heartbreaking story.
    But, these bundt cakes definitely is a delicious distraction. Looks really delish
