Life is all about the choices you make. And I for one don’t always make the right choices when it comes to eating. On most days all the healthy eating happens more in my mind than in reality. I commit myself to eating healthy every morning but that said can’t stop myself from reaching out to that trail mix (not the healthy kind) especially towards the end of the day. I also have a weakness for good Indian curries and if I would have this available for dinner, it’s quite likely that I choose to suffer from selective amnesia as far as healthy eating goals are concerned.

Homemade Energy Bar Recipe – Make A Healthy Choice

But all that has to change now. My big trip to India is coming up in a month’s time. And I have this college reunion on the cards too. I am going to meet some of my buddies after 16 long years.  All I am praying for now desperately is a quick loss of a few pounds. So really putting my act together and trying to create as healthy an external environment as possible.  Out go the pretzel bites and potato chips and in comes these healthy energy bars.

These contain a chock full of good ingredients which will help you feel accomplished, the kind of feeling you had when you made your mom proud with good grades. Honestly, I am not kidding you! How can you ever go wrong with oats, oat bran (special brownie points on that), psyllium fiber (on that too), hemp seeds, nuts, honey and dark chocolate?

Description

Homemade energy bars with the most healthy possible ingredients available. Try out this healthy Homemade Energy Bar recipe at home.


Ingredients

  • Oatmeal – 1 cup ( I used Quaker Oats)
  • Oat Bran – 1 cup
  • Hemp Seeds – ¼ cup
  • Psyllium Husk – ½ cup
  • Chia Seeds – ½ cup
  • Slivered Almonds – ¾ cup
  • Pistachios – ½ cup (grounded)
  • Dried Cherries – ¾ cup
  • Raisins – ½ cup
  • Cinnamon Powder – 1 tsp
  • Coconut Powder – ¾ cup
  • Honey – 1 ½ cup
  • Vanilla Extract – 2 tsp
  • Dark Chocolate – 9 oz
  • Fat free Milk – ½ cup
  • Coconut Oil – 2 tsp

Instructions

  1. Put all the ingredients (except the chocolate, milk, coconut oil and vanilla) in the food processer and pulse until coarsely grounded.
  2. Put the honey in the microwave for 30 seconds.
  3. Pour it into the grounded mixture. Start working the mixture with your hands and bring it together.
  4. Grease a sheet pan (lined with parchment )with coconut oil. Put the above mixture in it and press it down to get a cake like structure with even thickness.
  5. Keep it inside the freezer for 15 mins.
  6. In a microwave safe bowl, allow the chocolate to be heated with the milk and vanilla extract for 1 min. Take it out, give a stir and put it back for another min until fully melted.
  7. Take out the sheet pan from the freezer and pour the melted chocolate on top evenly.
  8. I sprinkled a few broken pieces of the chocolate bar and also dusted with pistachio crumbs.
  9. Put it back in the freezer for 30 mins.
  10. Take it out and let it rest outside for 5 mins before cutting into bars. Enjoy on the go.

  1. This looks great and so tempting! I have some of the ingredients at home. Not all of them. Am going to use what I have instead of waiting to gather all of them like I always do as this invariably means I end up putting off making something I love. Am sure this is going to taste far better than the store-bought energy bars ?
