When I was growing up and I would visit my ancestral home, many an afternoon, I vividly remember my grandfather lying down at one end of a huge four-poster bed reading out novels to my grandma lying next to him. And every single day, she would doze off half way and the old man unaware would keep on reading to her. After a while, he would discover that my grandma is asleep, he would just keep the book and his glasses aside and get on with his nap. This happened every single day.

Today when I look back I feel that one single memory ensconces me in such a happy place, a place of secure relationships, of unending support and selfless love.

Sam and I are married for 13 years now. We celebrated our wedding anniversary last week. He is my best friend. All we had when we met were dreams and over the years we have worked together hand in glove towards making a life together and achieving some of those dreams. I cannot imagine being anywhere else rather than here today with him. And there are so many fleeting moments throughout the day when his thoughtfulness reminds me of the men I saw at home growing up, my dadu (grandpa) and my baba (dad). It brings a smile on my face when I have my “Deja Vu” moments. It is as if this was meant to be, somehow God has his plans of directing you back to an environment where you have always belonged.

I think when you’re in love, you understand each other so well that even the expectations that you have from each other are very real. I see a lot of friends suffer secretly even after being married for more than a decade. It is as if the partners in the marriage have no clue of each other’s expectations. And over a period of time, a kind of indifference sets in. It’s sad to see such things. But then it’s not my prerogative here to suggest a solution. You live life once and I can just hope and pray things work out for them.

I am just plain fortunate to have grown in an environment where love fostered and bloomed. Having such positive rock-solid relationships just did not let any sort of insecurities breed. And nothing messes you up like having insecurities no matter what the source is. You could fake it to the whole world, but with a partner, the real self is revealed.

Well, this is definitely a serious discussion. But this issue has been so on my mind. I have been seeing a dear friend suffer and it definitely leaves me perturbed.

Coming to what lifts my spirits and makes me happy. Yes, cooking and more specifically making a dessert. The Malpua Recipe that you’re seeing here today is really special. Malpua is a traditional sweet, which incidentally was never done at home for me. It is a semolina pancake dipped in flavored sugar syrup. This is a quintessential Bong favorite, which is extremely common in all households but my family never made it. I really don’t know the reason why but Ma (Mom) never made it, dida (grandma) never made it and no one else did except for my aunt, mom’s sister. She probably made it once. However, this sweet is very easily available in stores and I never miss a chance to stuff myself with it whenever I am home. I also make it from time to time.

This time, when my good friend and a Bengali food magazine editor got in touch with me to give them a fusion recipe, I immediately thought of making something with Malpuas. So it was a Malpua Cheesecake that I made. The Malpua Recipe is actually very simple and if you really wanna make a statement or a finisher which would leave people spellbound, then this is it.

Description

Try out this Malupa Recipe at home and cook traditional indian dessert. A delectable fusion dessert which is an absolute showstopper for your dinner table.


Ingredients

For Malpuas

  • Semolina (Sooji) – 1/2 cup
  • All Purpose Flour (Maida) – ¾ cup
  • Milk– 1 ½ cup
  • Sugar – ¾ cup
  • Fennel Seeds – 2 tsp
  • Condensed Milk – ¼ cup
  • Vegetable oil – 1 cup

For Sugar Syrup

  • Sugar – 2 cup
  • Water – 1 cup
  • Crushed Cardamom – 4-5

For Cheesecake

  • Cream cheese – 2 cups
  • Condensed milk – 1 tin
  • Butter – 1/3 cup
  • Vanilla Extract – 2 tsp
  • Whipped Cream – ½ cup
  • Gelatin/AgarAgar – 7 grams
  • Warm water – ½ cup

Instructions

  1. To make the sugar syrup, boil the water, crushed cardamom and sugar together for 10-12 mins. Test the consistency by taking a drop between the tips of your thumb and forefinger; you should get a single thread.
  2. Mix together semolina and milk and let it rest for 30 mins.
  3. Barring oil, mix the rest of the ingredients for the malpua with the semolina mixture to make a batter.
  4. Heat the veg oil in a deep-bottomed pot. Put a ladle of the batter and deep fry over medium flame to a golden brown.
  5. Now throw in the malpuas in the sugar syrup. Let it absorb the syrup for a min or two and then remove.
  6. To assemble the cheesecake, melt the butter.
  7. Throw in the gelatin/agar agar in the hot water. It will melt.
  8. Mix Cream cheese, condensed milk, butter, vanilla together. I used an electric mixer and it took me 5 mins.
  9. Fold in the whipped cream.
  10. In a greased spring-form pan, put a layer of the cheesecake mixture.
  11. Top with a layer of the malpuas.
  12. Alternate with cheesecake filling. The top layer should be malpuas.
  13. Keep in the freezer for 8 hours.
  14. Garnish with edible silver foil and nuts. This step is optional.
