I choose to keep the flavor profile of these small bites quintessentially tropical around this time of the year. Mango is a go-to ingredient for me. I love using complementing flavors that enhances the sweetness of mangoes. The recipe that I am sharing today was published by The Society magazine.

Mango Chili Tamarind Shrimp Pastry Bites!

Small puff pastry squares baked to perfection and topped with a succulent shrimp infused with a sweet and sour tamarind chili sauce. The thinly sliced mango and avocado accentuates the flavor of these bites by rounding the flavors with the right amount of creaminess and sweetness. These are bites of pure delight. And we love to complement these with a light to medium bodied crisp white wine.

Mango Chili Tamarind Shrimp Pastry Bites

Description

Delicious bites that are packed with tropical flavors.


Ingredients

  • Shrimp – 8-10 (medium sized, depending on how many pastry bites you’re making)
  • Lime juice – 2 tbsp
  • Chili Flakes – 1 tsp
  • Turmeric – ½ tsp
  • Salt – To taste
  • Vegetable Oil – 1 tbsp

For the Sauce

  • Tamarind Pulp – 2 tbsp
  • Brown Sugar – 1 tbsp
  • Salt – To taste
  • Tomato Paste – 1 tsp
  • Chat masala – 1 tsp

For the Pastry Bites

  • Puff Pastry – 1 sheet
  • Mango – 1 (Thinly sliced)
  • Avocado – 1 (Thinly sliced)
  • Cilantro – 2 tbsp (Finely chopped)
  • Lime – ½
  • Jalapeño – 2 (Thinly sliced)

Instructions

  1. Cut 1-inch by 1-inch squares of the puff pastry and lay on a parchment lined baking sheet.
  2. Bake in a 350 degrees pre-heated oven for 15-20 mins until they are lightly browned and puffed up. Once done, remove and set aside on a plate.
  3. Marinate the shrimp with lime juice, chili flakes, turmeric and salt. Let it rest for 10 mins.
  4. In a pan heat the vegetable oil and lightly sauté the shrimp for 4-5 mins. Don’t overcook! Remove and set aside.
  5. Mix together the tamarind pulp, brown sugar, salt, tomato paste and chat masala.
  6. Pour the sauce on the shrimp and let it rest for another 10 mins.
  7. For the assembly, lay down the shrimp pastry bites. Top with the avocado and mango slices.
  8. Place a shrimp on top. Make sure that the shrimp is well-coated in the sauce.
  9. Top with jalapeno pepper and cilantro.
  10. Finish off with a light squeeze of lime juice. Enjoy the Mango Chili Shrimp bites!
