Again without digressing, the first time I saw apples growing on trees was in Manali and then Shimla in India. That was the most memorable trip of my life as that was our honeymoon. And I was in awe of it all. Having grown up in the hills, that place tugged at my heartstrings. So the first memory of seeing apples on trees was really special and then we are here in California where apples grow like wildflowers in most people’s yard. Ok, that was a stretch but I think apples are extremely common and they grow well. When we were house hunting as first-time buyers in 2013, one of the things I would be crazy about would be fruit trees (yes multiple, I was not happy with one). I remember someone had outbid us on a house which had a couple of jujube trees laden with fruit to the brim and it took me about 10 days to overcome that rejection.

Our house belonged to a 94-year-old when we first bought it and she was kind of like Sam. Believed in keeping it simple and clean. Yes, the house was super clean and the kitchen spotless because she ate canned food) AND there was just this one fruit tree in the backyard, our apple tree. Really old but it fruits like a dream. However, there is a downside too, the apples are green and really tart when eaten raw and you have to cook with them. They are not Granny Smith or not crab apples but somewhere in between. But then whatever they are, it’s my dream come true. A house with an apple tree in the yard! So as much as Sam wanted, I did not get rid of it. Over the years, we planted pomegranate, three varieties of citrus, a plum, a fruit cocktail, which bears four types of fruits in one tree and persimmon and yet another apple tree.

This year we picked tons of apples, gave away to neighbors with the disclaimer that they are tart and then I made apple pies, Hand pies for my Missy. She loves the Apple Pies you get in McDonald’s and to this date, we go to McDonald’s to get just two things, the McChicken burger and the Apple Pie. Now you know just how inspired I was to have tried the Apple Pie.

The best and easiest Apple Hand Pie Recipe because this pie dough recipe is really easy and is absolutely decadent.


Ingredients

Apple Pie Filling

  • Apple – 3, medium (cored, peeled and cut into small cubes)
  • Golden raisins – 2 tbsp
  • Butter – ¼ cup
  • White Sugar – ½ cup
  • Brown Sugar – 3 tbsp
  • Cinnamon – 1 ½ tsp

Pie Dough

  • All Purpose Flour – 2 cups
  • Butter – ½ cup (cubed small and chilled in the freezer 30 mins prior to making the dough)
  • Chilled Water – 3 tbsp
  • Salt – 1 pinch

Egg Wash

  • Egg – 1, cracked and beaten
  • Powdered Sugar – Enough to sprinkle on top of the pies

Instructions

  1. In a pan. Add the butter and let it melt. Throw in the apples and raisins and cook over medium heat for 7-8 minutes. You will see the apples breaking down. Keep stirring.
  2. Add the sugars and keep cooking for another 4 mins.
  3. Remove from the stove and add the cinnamon and mix well.
  4. Keep aside.

For the Dough

  1. In a food processor, add 1 cup of flour.
  2. Add the cubed and chilled butter, and add another cup of flour on top of it. Pulse the food processor for a minute and half.
  3. Now add the water and pulse for another minute and half.
  4. Empty the flour in a bigger bowl or work surface and without over mixing, bring it together.
  5. Wrap with plastic wrap and refrigerate overnight.
  6. During this process if you feel the dough is too dry, add half a tablespoon of water and then bring the dough together.

Assembling the pie

  1. Now separate the dough in eight parts.
  2. Take each part and make a ball. Then roll out a circle about 4 inch in diameter.
  3. Add a spoonful of the filling in the middle.
  4. Seam the edges tight by pressing gently and then pinching the dough along the edge with your fingers to make a pattern.
  5. Make three small slits on each of them and brush with the egg wash generously.
  6. Sprinkle some powdered sugar.
  7. Bake in a pre-heated 350 degrees oven for 30-40 mins.
  8. If you wish you could dust powdered sugar once the pies are out of the oven and cooled. However, this is optional.
  9. Serve with some ice cream if you want to kick things up another notch.
