Banana Peanut Butter Muffins Recipe, in fact, jumbo ones. The inspiration is again overripe and almost spoilt bananas which no one will touch. Sometimes I just throw them coz I don’t want to make another cake/muffin or anything that has to do anything with sugar. But the husband loves Banana Bread and keeps asking for me to make it. Now banana bread is such a staple in my house that my teen can make it blindfolded.

And I did not want to make another banana bread. So I made a banana muffin with my most favorite ingredient, guess what, peanut butter.

Banana Peanut Butter Muffins Recipe – Jumbo Size Muffins

Since I have started working out, I take the luxury of eating a spoonful of peanut butter every day. It is a good source of plant protein and the fitness world swears by it. I eat it for a different reason. I eat it because I just love it. So peanut butter in shakes, peanut butter in curries and peanut butter on toast, I thrive on these. So now Peanut Butter in Muffins. How bad can that be? Yes, not bad at all. The result was this gorgeous looking, soft and decadent jumbo muffin. Coffee and half of this bad boy was my breakfast this morning. Trust me, I have not been this happy in a long time.

Ingredients

  • All Purpose Flour – 2 Cups
  • Banana – 3, peeled and mashed
  • Eggs – 2
  • Sugar – 1 cup
  • Light Brown Sugar – ½ cup
  • Baking Soda – 3/4 tsp
  • Baking Powder – 2 tsp
  • Salt- ¼ tsp
  • Vanilla Extract – 2 tsp
  • Vegetable oil – ¼ cup
  • Peanut Butter – ½ cup
  • Buttermilk – ¼ cup
  • Cinnamon Powder – 1 tsp
  • Nutmeg Powder – ½ tsp
  • Cranberries – 3 tsbp, optional
  • Walnuts – 2 tbsp, optional

Instructions

  1. Pre-heat the oven to 350 degrees F.
  2. In a bowl, sift the flour and add salt, spices, baking powder and baking soda. Mix well.
  3. In another bowl, add the mashed banana, buttermilk, peanut butter, vegetable oil, vanilla, eggs and sugar. Mix well to incorporate everything well.
  4. Pour on the flour a little at a time and keep folding to incorporate everything well. Add the cranberries and walnuts. Make sure not to over mix.
  5. In a greased muffin pan, pour in the batter about ¾ way within the muffin cup. Bake for 30 mins.
  6. Insert a wooden skewer in the center of the muffin; if it comes out clean, the muffins are done. Also, mine were jumbo muffins. If you make normal sized muffins and depending on the power of the oven, it might take less time.
  7. Let the muffins cool down before enjoying with your choice of beverage.
