Coconut Mug Cake Recipe with Macerated Stone Fruits and a Coconut Cream! I took the day off today, as I was not feeling well! I wanted to just sleep in. However, when summer vacation is on, the “sleeping in” on a weekday is not possible. So I went about the day at a much slower pace of course and after a long time did “NOTHING” (for a few hours). If you know me I am a Type A personality, always on the move, always organized and trying to make the most of every waking moment. I don’t do well with absolutely sitting idle and I know that is such an art. As I am aging, I am trying to put a conscious effort towards that, as time wasted is not really wasted.

G and I lied down on the couch and did what we do the best. Watch Food Network. We were watching an episode of The Kitchen where the guest chef Monti Carlo made a fun recipe, a Coconut Mug Cake recipe with all the cute fixins, tropical fruits, coconut cream and toasted coconut to be exact. And there goes our downtime. G immediately proposes, “Mumma, let’s make it” and I sprung up and got to the action. G baked the mug cakes as these took 2 mins in the microwave and I whipped the cream, macerated the fruits. Of course, we tweaked the original recipe, as we did not have all the ingredients in hand. But whatever we did, the result was delicious. G helped with the styling and I clicked. By the time we were done, it was 3.30 pm and we completely forgot to eat lunch. But then this happy time with my little one on this July Monday was pre-destined.

This Mug cake is extremely easy yet fancy. I would totally entertain with it as you can pre-make the batter and the toppings and then at the end of dinner, just put the cups in the microwave for a couple of minutes. And I can guarantee you that your guests would be talking about the flavors for a long time.

Description

A fun and delicious Coconut Mug Cake Recipe that will take you back to the Tropics.


Ingredients

  • Unsalted Butter – 2 tbsp
  • Egg- 1, beaten
  • Vanilla Extract – ½ tsp
  • Sugar – 2 tbsp
  • Thick Coconut Milk – 1/3 cup (skimmed from the top of the can)
  • Sour Cream – 1 1/2 tbsp
  • Cake Flour – 6 tbsp
  • Baking Powder – ¾ tsp
  • Toasted Unsweetened Coconut Flakes – 1/3 cup
  • Pam spray

Toppings

  • Fruit – 1cup (plum, nectarine and peach diced small and a few blueberries)
  • Orange zest – 1 tbsp
  • Orange Juice – 2 tbsp
  • Sea Salt – 1 pinch
  • Maple Syrup – 2 tsp
  • Mint Leaves – For Garnish
  • Cherries – For Garnish

Coconut Whipped Cream

  • Heavy Cream – ½ cup (chilled)
  • Thick Coconut Milk – 1 tbsp (skimmed from the top of the can)

Instructions

  1. In a bowl, add the diced fruits, orange zest, maple syrup, orange juice, sea-salt and mix well! Let it stand for 10 mins.
  2. In a dry skillet, put the unsweetened coconut flakes and toast it until they turn golden brown.
  3. In a bowl, mix together melted butter, beaten egg, vanilla extract, sour cream and coconut milk. Make sure everything is incorporated well.
  4. In another bowl, mix together the cake flour and baking powder.
  5. Add to the mix of wet ingredients. Stir to incorporate everything.
  6. Mix in coconut flakes and keep aside 1 tbsp to sprinkle on top later.
  7. Grease two medium sized cups with Pam spray and pour in the batter and fill the cups three- quarters full.
  8. Put in the microwave for two mins. You will see the cakes rise and then deflate. Don’t be alarmed. Just set the mugs aside. Don’t overcook.
  9. Chill the bowl in which you will whip the cream for at least 15 mins. Also, chill the whisk.
  10. The cream and the coconut milk should be chilled as well.
  11. Pour the chilled cream and coconut milk in the bowl and whisk for at least 10- 12 mins until you get soft peaks.

Assembling the cake

  1. Take the mugs and top with the fruit along with some of the liquid that you will have in the fruit. This will keep the cake moist.
  2. Top with the whipped cream and then top with toasted coconut. Garnish with cherries and mint leaves.

Notes

  • Feel free to use any fruits of your choice. In fact, mango, pineapple, strawberries would taste fabulous too.
