Eggless Fruitcake Cookies Recipe! You heard right! This year before I could get to my fruit cake drama, I baked the cookies first. And why do I say drama? Well, the Christmas Fruit Cake without any drama is no fun! Last year, in particular, I chugged some fine malt from the hub’s arsenal into my dried fruits and then went a step ahead and posted about that on Facebook. Guess what, hell broke loose. The men on my friend’s list stood in solidarity with my man questioning my sanity. They could not wrap their heads around the fact that something as premium as a single malt should be used in soaking the fruits. I was at best amused with the whole thing and what mattered to me most was the cake and it turned out delicious!

Description

A delicious combination of the Christmas fruit cake and melt-in-your-mouth shortbread cookies. Try this Eggless Fuitcake Cookies Recipe at home today!


Ingredients

  • Dried Cranberries – 1/4 cup, coarsely chopped
  • Dried Fruits – 1/3 cup ( apricots, figs, raisins, cherries)
  • Pecans – 1/4 cup, ( lightly toasted and chopped fine)
  • Candied Ginger – 2 tbsp, finely chopped
  • Candied citrus peel – 2 tbsp, finely chopped
  • Orange zest – 1 tbsp
  • Bourbon/Whisky/Rum/Brandy – 1/2 cup
  • All Purpose Flour – 2 cups
  • Ground Cloves – 1/2 tsp
  • Ground All Spice – 1/2 tsp
  • Ground Cinnamon – 1/2 tsp
  • Salt – 1/2 tsp
  • Powdered Sugar – 1 cup
  • Butter – 1 cup ( 2 sticks)

Instructions

  1. In a bowl, combine the dried fruits, cranberries and the alcohol. Set aside overnight and let them macerate.
  2. In another bowl, mix together the nuts, orange zest, candied ginger and the candied citrus peel.
  3. In a bowl, sift the flour and add salt, the cinnamon, cloves and all spice.
  4. In a stand mixer, add the room temperature butter and whip for a minute. Add in the powdered sugar in two batches and continue mixing for 2-3 minutes until everything is incorporated and it looks creamy.
  5. Now on low speed add the macerated fruits. I add the alcohol too. But you can drain and use only the fruits. In that case, if needed you might have to use 1 tbsp of milk if the dough looks dry. But this is optional. Mix everything well.
  6. Now add the flour and continue to mix till the dough comes together. This takes about 5 mins.
  7. Scrape the dough and bring it together in one ball. Now place the ball on a large enough parchment paper. Wrap it and them shape it into a log. Take care of the diameter of the log and it should be as wide as you want the cookies to be.
  8. Refrigerate the log for 4 hours.
  9. Take it out and using a sharp knife cut into discs about quarter of an inch thick.
  10. Line two baking sheets with parchment paper. And place the cookies on them.
  11. In a 350 degrees F pre heated oven, bake the cookies on the middle rack of the oven for about 20-25 mins until the edges turn a golden brown. How long you need to bake will also depend on the thickness of the cookie. Keep checking after 20 mins.
  12. Take them out and let them stand for 5 mins and then transfer the cookies on a wire rack to cool completely.
  13. Enjoy with a warm beverage or eat just like that!

I have some of that whisky soaked fruits from last year in a big mason jar in a dark corner of my kitchen closet, just as they suggest, so things will be easy this year. And that is probably the biggest problem. I am kind of missing out on all the hoopla around the soaking of the fruits.
