I have always had a love-hate relationship with eggnog. Yes, I would rather add it to my baked goods than having it just by itself. And when you add your eggnog to your cookie batters like I did in this Eggnog Madeleines Recipe, trust me, magic happens.

Eggnog Madeleines also get a special dimension when espresso joins the party. It’s a bunch ofhappy festive flavors in a decadent cookie like a madeleine. And if that was not enough, these babies also get a glaze of white chocolate and gets dusted with white sparkling sugar. The white chocolate along with all the warm holiday spices in the eggnog like cloves and nutmeg makes these cookies really special. I always make them to give out as gifts for friends and family cause this is one good-looking cookie. And till date, whoever I have sent out these cookies too have absolutely loved them. They are perfect when paired with your mid-day cup of coffee or maybe that occasional cup of coffee after dinner by the fireplace when you are entertaining a group of friends for the Holidays. C’mon this is the best time of the year.

Description

When Espresso meets Eggnog, magic happens! These decadent and melt-in-your mouth White Chocolate glazed Espresso Eggnog Cookies are perfect for this time of the year!


Ingredients

Cake Flour – 1 1/2 cups

Granulated Sugar – 3/4 cup

Baking Powder – 1/2 tsp

Ground Cloves – A Pinch

Cocoa Powder – 1 tbsp

Nutmeg – 1/4 tsp (freshly grated)

Eggs – 3

Bourbon – 3 tbsp

Heavy Cream – 3 tbsp

Unsalted Butter – 3/4 cup ( melted and cooled)

Instant Espresso Powder – 1 1/2 tbsp

Kosher Salt – 1/2 tsp

For the Glaze:

White Chocolate chips – 100 grams

Heavy Cream – 100 grams

White Sparkling Sugar for dusting ( optional)


Instructions

Pre heat oven to 375 degrees F. Position a rack in the middle of the oven.

In a bowl, add the sifted flour, baking powder, cloves, salt, espresso powder and nutmeg.

In a stand mixer or using a hand whisk, mix together the eggs and the granulated sugar until it looks translucent and airy. This takes about 5 mins.

Add the dried flour mix and fold in gently.

Pour in 1/2 cup of the meted butter, bourbon and cream and mix until well incorporated.

Cover the bowl and refrigerate for 30 mins.

Brush the madeleine mold generously with butter ( remaining) and place in freezer for 10 mins.

Remove pan from freezer and the batter from the fridge.

Add scoops of the batter in each buttered mold in the pan. Using the back of the spoon spread the batter evenly over the mold to cover it in full.

Bake the madeleines for 12 mins until they look brown and plumped up.

Remove from oven and let it cool for 5 mins. Using a spoon, loosen the madeleines and un-mold them.

Wash and dry the pan and brush with butter before you use it for the next batch again.

For the Glaze:

In a glass bowl add the white chocolate chips and the heavy cream and mix.

Put the bowl in the microwave and melt the chocolate in high power for 45 secs. Take it out and mix and repeat the procedure for another 45 secs. You will need to do this for 3-4 times before the chocolate melts and gets to a consistency that can be used for the glaze.

Dip the madeleines in the chocolate at an angle and let them rest on a cool cookie sheet. Dust with white sparkling sugar.

Keep the madeleines in the fridge for 15 mins.

The madeleines are ready to be served now.
