Oats & Apple Pie Bread with a Streusel Topping! You may find it a tad weird that I am emphasizing that it is not just an Apple Pie Bread but it is an Oats and Apple Pie Bread. And it has oats two ways, steel cut oats (yes, you heard right) and quick rolled oats. I wish I could tell you that it’s all healthy and a no-fat recipe with the goodness of oats, but that’s not happening and there is a reason for that and I will let you know it too. Before that, I need to let you know that Ms. G went back to school today. It was the first day of her high school life and I can tell the transition will take some getting-used-to for all of us. So this loaf is perfect for my high schooler’s after-school snack too.

Now you know from my Apple Hand Pie [2] recipe that we have an apple tree in the backyard which fruits like crazy but the only thing is that the apples are sour and more suitable to be cooked with. So I made those hand pies [2] and the past weekend we had a summer party in our backyard. And we had about six other families with young children attend. So among the things the kids did that day, they also picked a lot of apples from the tree. Our friends took some home and I am left with another batch now. What do I do this time? And serendipitously an email popped up in my inbox just around that time from one of our partners at work asking for the Holiday ad inventory. Well, yes, believe it or not, the prep for the most wonderful time of the year is picking up steam. And how can I ignore that?

I love fall and all the winding down of outdoor activities. I love to stay indoors and even in California I have a functional fireplace and you will find me by it most of the times curled up on the couch with a hot beverage. The apples, the cinnamon, the brown sugar, the butter all remind me of those cozy times, of times that are a tad less crazy. Hence in spite of the oats, I had to use all of these, which did make it a lot more indulgent. Trust me that aroma of baking with these ingredients brings in a feeling of a warm and cozy autumn cuddle. And that crunchy streusel topping is what makes this recipe completely irresistible.

Ingredients

For the Apple Pie Filling

  • Apple – 2, medium (cored, peeled and cut into small cubes)
  • Golden raisins – 2 tbsp
  • Butter – ¼ cup
  • White Sugar – 3 tbsp
  • Brown Sugar – 1/4 tbsp
  • Cinnamon – 1 ½ tsp

For the Base and Top Layer

  • Steel Cut Oats – 1 cup
  • Quick rolled Oats – ¼ cup
  • Butter – ¼ cup, melted
  • Vegetable Oil – 2 tbsp
  • All Purpose Flour – ½ cup
  • Brown Sugar – ½ cup
  • White Sugar – ¼ cup
  • Cinnamon – 2 tsp
  • Milk – 1/3 cup
  • Vanilla Extract – 11/2 tsp
  • Baking powder – 2 tsp
  • Salt – 1 pinch

For the Streusel Topping

  • Quick Rolled Oats – 2/3 cup
  • Slivered Almonds – ¼ cup
  • Brown Sugar – ½ cup
  • Butter – ½, melted
  • Cinnamon – 1 tsp

Instructions

For the Apple Pie Filling

  1. In a pan. Add the butter and let it melt. Throw in the apples and raisins and cook over medium heat for 7-8 minutes. You will see the apples breaking down. Keep stirring.
  2. Add the sugars and keep cooking for another 4 mins.
  3. Remove from the stove and add the cinnamon and mix well.
  4. Keep aside.
  5. In a big bowl, add all the ingredients for the base and top layer one by one and mix it together.
  6. Make sure the steel cut oats is not the consistency of porridge. It needs to be relatively dry. What I do to cook the oats is cook about 1 cup of oats in ½ cup of water for 10 mins and then remove from stove and keep it covered for another 10 mins. The oats plump up without being too soft. They should have a little bite to them for the recipe. If the mix looks too soft add 2 tbsp of flour and if the mix looks too hard feel free to add 2 tbsp of milk.
  7. Now take half the mixture of the oats and flour and put it in a greased loaf pan. Press it to form a nice even layer about 3/4 of an inch thick.
  8. Spread the apple pie mix evenly over the base layer.
  9. Top with the remaining half of the oats and flour mix. Press it down gently to form an even layer again.
  10. Now in a bowl add all the ingredients for the streusel topping. Make sure that you mix well.
  11. Sprinkle it evenly on top of the loaf.
  12. Preheat the oven to 350 degrees F.
  13. Bake the loaf for 45 mins. Take it out and let it sit for an hour before you slice it.
  14. Serve alongside milk if serving a kid or you can have one alongside a cup of good coffee.
