3 Ingredient Peach Popsicles Recipe. Popsicles, Ice-lollies whatever you call them, I have a little story to tell here. Yes, I blog to tell the stories, the ones which G and probably my grandkids will read later and relive these times with me. Thatā€™s the legacy I want to leave behind.

So here comes the story! For a pretty long time, probably till I was eight or nine, I associated popsicles with ā€œdrainer jolā€ (sewer water). My dad was transferred to this little industrial town called Durgapur and we moved there when I was a year old. I started my schooling in Durgapur and still have vivid memories of our life there even though we lived there till I was about 6 years old. My mom is raised in South Calcutta and grew up promenading the sixties grandeur of Gariahat. And when we moved to Durgapur, it was at best a blue-collar, proletarian little town. So she basically did not approve of anything especially street food and I canā€™t remember what else affected me directly but the ban on popsicles was something, which got me to write this blog even today.

Peach Popsicles Recipe (3 Ingredients)

I remember I would get out from school in the afternoon around 12.30 pm and Mom would be standing there with an umbrella to pick me up. And the first thing she would reiterate to me was, ā€œPopsicles here are made from sewer water, so we donā€™t eat them. We will go to Calcutta in the summer and you can eat as many as you like.ā€ This little warning came because on the way back home, just outside of school there would be vendors selling ice-lollies in every color and shape. And some days the rebel in me would make an appearance and I would be throwing one of those inconsolable fits, kicking and screaming and basically going limp on the ground and go tossing and turning in the dirt. The ā€œtime-outsā€ whatever those were then did not scare me at that point in time. But my meltdown did scare Maa. So she continuously brainwashed me ā€œo gulo drainer jol die banaiā€ (these are made of sewer water).

And I would wait for the summer vacations when I could be in Calcutta and my masis (Momā€™s sisters) indulged my every Popsicle wish list.

Now that when I am a Mom myself, my daughter is not a big fan of popsicles and can you imagine the irony of that? She like ice creams and that too some flavors and would not touch anything else. All my mommy life, I did a lot to get her hooked to popsicles but no major success there. However, I still love ā€˜em. So I still make ā€˜em.

The ones here are extremely special because this is the first year we grew peaches and these are made from the ones that grew in our own yard. These peaches were super sweet so that made things really easy. Blended the peaches with some maple syrup and blended some reduced fat coconut milk with some maple syrup and poured in molds. That was it and these are my go-to anytime healthy snack, perfect to beat the heat. And licking onto them still takes me back to the forlorn Durgapur summer afternoons when I was forbidden the most attractive treat on the face of the earth. Times change and my freezer is stacked with various Haagen-Dazs and Ben&Jerry ice cream tubs today but nothing can come close to the joy that came from that one moment when I stood waiting anxiously in front of that little cart for my turn to get my hands onto my chosen ice-lolly, an orange, a mango or a pineapple. That moment of happiness is still perceptible if I just close my eyes.

Description

A 3 ingredient Peach Popsicles Recipe, delicious and healthy snack which helps beat the heat!


Ingredients

  • Peach Puree – 2 cups
  • Maple Syrup – 1/2 cup
  • Reduced Fat Coconut Milk – 1 can (400 ml)

Instructions

  1. Blend the peach with 1/4 cup of maple syrup.
  2. Mix 1/4 cup cup of maple syrup with the coconut milk.
  3. Pour the peach puree half way into the mold and then top with the coconut milk.
  4. Freeze for 6 hours.

Notes

  • You can use frozen peach too to make this popsicle.
