Summer is slipping away and with kids being back to school; weekdays are not as relaxed as they used to be. I am looking for some easy dinners, that are healthy and satisfying all the time.  And hence my search for recipes which “mean something” on the dinner table, yet takes barely minutes to whip up is always on. This recipe can be prepped ahead and there’s  a ton of possibilities with the left-overs. Now that’s a dream dish for any mom, I bet.

Ingredients

  • Salmon (Cubed) – 1 ½ Pounds
  • Rice Vinegar- 3 Tbsp
  • Cilantro (finely chopped) – 4 Tbsp
  • Garlic (finely minced) – 1 ½ Tbsp
  • Teriyaki Sauce – 2 Tbsp
  • Black Pepper (Freshly ground) – 2 tsp
  • Salt – To taste
  • Lime (Juiced) – ½
  • Toasted Sesame Seed – 2 Tbsp
  • For the Salsa
  • Corn on the Cob – 1
  • Butter – 1 tsp
  • Cherry Tomatoes (halved) – ¾ cup
  • Red Onion (Diced) – ¼ Cup
  • Pineapple (Diced)- ½ Cup

Instructions

For the Salmon

  1. In a Ziploc bag, add the salmon along with the vinegar, chopped cilantro and minced garlic. Mix well so as to coat the fish. Let it sit in the refrigerator for at least 4 hrs.
  2. In a 400 degrees F oven, cook the salmon for 12 minutes. It should look well browned.
  3. Take the salmon out of the oven, top with the teriyaki sauce and return it back for 3 minutes.
  4. Salt and pepper it to taste and add a squeeze of half a lime before sprinkling it with toasted sesame seeds.

For the Salsa

  1. Apply butter on the corn before grilling it on an open flame.
  2. Once the corn is cooled, take a sharp knife and cut off the kernels.
  3. Mix all the ingredients and the corn together.
  4. Add lime juice and salt to taste. Mix well.
  5. Serve the salmon with the salsa on the side.
